Wow! That is so cool! I love it. I think that we will be doing a bad pop up pretty soon! 
I love creating pop up mini books for my toddler, but make them sturdy if you are dealing with a toddler. Mine loves to rip them off even if I am right there holding the book. We are working on book manners also. Pop ups are a great way to teach about animals and so on, I also like hidden door books, sensory books, and so on. We love all that stuff if I can teach my toddler not to be mean to the books that I spend days making for him.
Here is a template to make a pop up information book, like making a report. Cut the dashed lines and fold the dotted lines, then add a picture of an animal or whatever, then write about it below.
