Help in the kitchen

I don’t know about you, but I like to spend as little time in the kitchen as possible and still enjoy delicious family meals.

I thought it would be fun to and hopefully helpful to share some of our cooking success stories.

What meal that you enjoy (a very important criteria) preparing meets all of the following criteria?

  • easy enough for a beginner to make,
  • super quick preparation,
  • very healthy, and last but not least,
  • yummy.

One of our favorite family meals is making our own little pizza’s. We cut english muffins in half and put pizza sauce, mozzarella cheese veggies and anything else we want on our pizza and bake at 400 for 8-10 minutes or until cheese is melted.

I would love to hear some other suggestions since I’m no Rachael Ray in the kitchen :wink:

We had chicken curry last night, one of my favorites. It doesn’t take too long and everyone seems to like it. I just cut up and saute some chicken, set aside. Stir fry some veggies in the same pan the chicken came out of. Add chicken broth, curry, tiny bit of cinnamon and salt. Add the chicken back in. Stir all. Then I set all aside. I mix a can of coconut milk in with 2 Tbs. flour cook until it thickens and pour all over chicken mixture. I serve with rice. Oh, it is yummy! I always make enough so we have left overs! :tongue2:

I like the book “Cooking for the Rushed” by Sandi Richard. It even has shopping lists for each week. Most of the recipes are very yummy. I can only think of one my family won’t eat.
